Where the standard comes from

Chef grew up in Chicago, which is its own kind of education. In a city that takes food that seriously, you learn early what a high standard actually looks like — and that anything worth putting your hands to is worth doing with some pride in it. She has never really cooked any other way.

She began in pastry, the most exacting corner of any kitchen — the one where a few grams either matter or the whole thing collapses. That precision never left her.

Then a decade co-owning and running her own restaurant there, before Nashville and a post as sous chef at Fifth & Taylor, with her hands in every station on the line.

She could still be doing that. She chose something else.

Why she cooks in Nashville homes now

A restaurant runs on averages. Every plate has to work at volume, every menu has to satisfy a room full of people it has never met, and the honest answer to could this be better? is often yes — but not at this price, at this scale, tonight. Chef knows that trade intimately. She made it for ten years.

In your kitchen the question changes. There is no room of strangers to average across. There is you, the people at your table, and what would genuinely take care of them.

She isn’t cooking to a margin. She’s cooking to a table.

That is why she keeps creative and executive control of the whole evening — not just the food, but the shape of the night. It is also why no two menus she writes are the same.

What she won’t compromise

Chef does not buy the lesser version of anything. Not the produce, not the proteins, not the fats and oils — not even the cookware. There is no second tier she quietly reaches for when she assumes nobody will notice, because the noticing is the point, even when a guest can’t name what they’re noticing.

Most of what she cooks comes from people she knows by name. She looks for regenerative growers and ranchers holding standards well above what a label requires, and she pays what that costs.

What it’s like to hire her

Personal, mostly. Chef asks a great many questions before she writes a menu — about what you love, what you avoid, who is coming and what the night is meant to feel like. Allergies and dietary restrictions are designed into a menu from the start rather than worked around at the end.

Then she shops, cooks in your kitchen, plates every course, and cleans up completely. You are a guest at your own table.
